Sparkling Tamarind Tea

Soda water or sparkling water
50g tamarind paste
3 black tea bags
1.5 cups water
Fill a pot with water, add the tea bags and boil over medium high heat. Let the tea brew until the water starts to boil.
Lower the heat to medium and add tamarind paste, stirring continuously until the tamarind paste has completely dissolved.
Turn off the heat then add lemon zest and sugar. Stir occasionally until the sugar dissolves.
Leave the syrup to cool down. Once cooled, strain the syrup and pour into a container. Keep chilled if storing overnight.
To enjoy, fill a glass with ice, add tamarind syrup (about one-third of your glass) and fill the rest with soda water or sparkling water for a refreshing summer drink!
